Dim Lighting May Make Food Less Tasty

There’s nothing like a candlelit dinner to set the mood and make the meal exceptional, right? Not so much. According to new research, dim lighting is a common characteristic of upscale and romantic dining, but it turns out, it could be having a negative effect on the food itself.

Dutch researchers looked at the influence of two different levels of ambient light on “taste intensity” experienced by people eating in a restaurant. They enlisted 138 participants to dine on a four-course meal with various lighting conditions and had them rate both the lighting and the flavor.

The diners who ate under bright ambient light perceived the overall taste of the meal as more intense, compared to those who were given dim lighting. As for the level of light, participants reported both bright and dim lighting as equally pleasant. So, while darker mood lighting may be more romantic and help people relax while they eat, if you want to really enjoy the full flavors of what you’re eating, you may want to shine some light on it.
